This is one of several variations on basic oatmeal from Good and Cheap. I love this one for many reasons, not least of which is because it reminds me of my dear friend, Sarah Chan who loves all things baklava. We once made a little cookbook together that we self-published called Velo Fare. The recipes were based on the local markets that we loved to visit together by bicycle. We made pistachio pancakes with baklava syrup for that book. That made me realize that the flavors of baklava are pretty accessible and should be a bigger part of our lives—like in our oatmeal!


Baklava Oatmeal

Baklava oatmeal is just a simple oatmeal recipe with added baklava flavors of honey, nuts, cinnamon and orange.

Ingredients

  • 1 cup rolled oats
  • 2 cups water
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 Tbsp orange zest finely grated
  • 4 Tbsp honey
  • 2 Tbsp almonds or pistachios chopped

Instructions

  1. In a small pot, add the oats, water, salt, cinnamon, orange zest and 2 Tbsp of the honey. Place it on medium-high heat, just until the water comes to a boil.
  2. Immediately turn the heat to low and place a lid on the pot. Cook for 5 minutes, until the oats are soft and tender and most of the water has cooked off. You can add more water if you like your oatmeal smooth and thin, or use slightly less if you want a thick oatmeal.
  3. Once it’s cooked, top each bowl with another tablespoon of honey and a tablespoon of nuts.
