This recipe is from Good and Cheap.

Good and Cheap cover 2nd edition

Good and Cheap is a gorgeous cookbook for people with limited income, particularly on a $4/day food stamps budget. The PDF is free (ahora en Español!) and has been downloaded more than 15,000,000 times. I have more cookbooks, too!

This Coconut Lime Oatmeal is one of several variations on basic oatmeal from Good and Cheap. Coconut is such a great addition to oatmeal, and the lime just makes it a little more fresh and interesting. Plus, you know we are always supposed to put the lime in the coconut right? 😉

Coconut Lime Oatmeal

Coconut lime oatmeal is just a simple oatmeal recipe with added coconut and lime juice. An easy way to add a little bit of tropical to your morning.

Servings 2

Ingredients

  • 1 cup rolled oats
  • 2 cups water
  • 1/4 tsp salt
  • 1/4 cup shredded coconut
  • 2 Tbsp sugar
  • 1/2 lime juiced

Instructions

  1. In a small pot, add the oats, water, salt, coconut and sugar. Place it on medium-high heat, just until the water comes to a boil.
  2. Immediately turn the heat to low and place a lid on the pot. Cook for 5 minutes, until the oats are soft and tender and most of the water has cooked off. You can add more water if you like your oatmeal smooth and thin, or use slightly less if you want a thick oatmeal.
  3. Turn off the heat and squeeze the juice of half a lime over the top.
