Decadent Chocolate Coconut Swirl Pie

coconut chocolate swirl pie in dish with yellow dish cloth beside

Sometimes I really crave complex baking projects. I love dreaming up a new combination of flavors or textures and spending tons of time researching. I often don’t share the results of these little journeys because they are too complicated and specific to my weird taste to bother you guys with. But sometimes I end up with something worth sharing and that’s even more exciting. This chocolate coconut swirl pie is just that. If you make this beauty you’ll definitely want to display it with pride, it’s quite a looker.

Carrot-Pineapple Cake for Dan

Carrot-pineapple cake with cream cheese frosting from the top with flowers

I must admit I don’t particularly care for Valentine’s day and I rarely even acknowledge it’s existence. In theory it’s a great idea. Celebrating love! Yes, I am so in! Beef stroganoff is one of my husband’s favorites, so I make it as a treat for him—and one of my early readers, Dave, says his mother made it for him growing up. It’s a classic winter meal from Eastern Europe that warms up a cold house and fills the air with rich aroma. You can use any cut of beef; just adjust the cooking time based on the toughness. Dave’s mom made it with red pepper instead of carrot, so feel free to do the same if you can get red peppers at a good price.

My partner, Dan has told me on many separate occasions how good these carrots that they serve at work are. (Yes, Dan is given lunch at work, his life is great). They are basically just carrots, soaked in butter and ginger. But Dan eats them every chance he can get.
