Mango Lassi

Mangos are cheap, juicy and delicious right now. They must be in season somewhere and are making their way to NYC and into my kitchen on a regular basis. Pretty much every morning I haven’t been traveling lately I have made myself one of these. It starts the day off right! With Mother’s Day coming up I know I’d probably whip up one of these for my Mum if I got to be with her, so I hope some of you can make these for your Mothers!


Mango Lassi

Delicious frothy blended drink of mangoes and yogurt.

Ingredients

  • 1 mango diced
  • 1 cup yogurt
  • milk or water as needed
  • 1/2 tsp vanilla (optional)

Instructions

  1. Blend the mango and yogurt together (and the vanilla if using). If it's too thick to drink with a straw, add some milk to thin it out. A ripe and juicy mango combined with thin yogurt is often all you need, but if your yogurt is thicker you may need to thin it out. Be warned: if you make this for children, they will request it over and over.

Recipe Notes

You can substitute frozen mango, you may just need to add a bit of water or milk so it blends enough. Add a splash of vanilla for extra flavor if you have it.
