Homemade Ginger Ale

Yes, ginger can settle your stomach when you have mild nausea. In my experience it’s no match for serious pregnancy induced nausea, but homemade ginger ale is fizzy and sweet and spicy and just delicious. And you deserve deliciousness.

This recipe simply involves making a ginger infused simple syrup and mixing it with seltzer. Easy! And you can add as much or as little syrup as you like so you can have a super sweet and zippy ginger ale or a more mellow grown up ginger ale. Someday maybe I’ll share with you how to make fermented ginger beer, at some other time when I’m more patient with longer kitchen projects. 🙂 See the full post with recipe links here.


Homemade Ginger Ale

A ginger infused simple syrup to add to seltzer to make homemade ginger ale.

Servings 8 drinks

Ingredients

Syrup
  • 1 large ginger root
  • 1 cup sugar
  • 2 cups water
  • 1 liter seltzer
  • 1 lime sliced into wedges
  • ice
Additions
  • 2 whole star anise
  • 4 to 6 green cardamom pods

Instructions

  1. Slice up the ginger root into medallions.
  2. In a pot bring the sugar, water and sliced ginger to a boil on medium heat. Once it begins to bubble, turn the heat down to low and simmer for 30 minutes.
  3. Pour the syrup through a sieve to catch the ginger. You should have about 1 cup of syrup, if it is a bit less than a cup, add water until it is 1 cup so it isn’t too sweet and syrupy.
  4. To make one drink add 2 Tbsp syrup to a glass and pour ½ cup of seltzer on top. Squeeze a little lime into it. If you want to make a larger quantity, mix all the syrup with the liter of seltzer and squeeze lime to taste in each drink.
