Today I have a very Canadian treat to share with you. Nanaimo bars! All the Canadians reading this are licking their lips, but the rest of you are probably going, huh? Nanaimo bars are a tray dessert made up of a crust layer of crushed graham crackers, nuts, coconut and chocolate, a filling of fluffy vanilla frosting and a chocolate topping. Zucchini in chocolate cake sounds weird, but it’s a very mild flavor and the truth is you barely taste it. It adds tremendous moisture to these beautiful dark chocolatey muffins. The yogurt, oats, and zucchini make these so moist and soft and then you get a little gooey meltiness from the chocolate chips. Wow. Anyway, give them a try. Chocolate and orange is such an incredible flavour combination, and yet I forget about it until the holidays each year. Sometimes I think holidays are made just to snap us out of our routines and remind us that there is so much more to life!
