Another classic from the archives while I’m away for the holidays. This Cauliflower soup is also from my first cookbook, From Scratch. I put it in with my middle sister, Emily, in mind and it totally worked, she makes it all the time (or so she claims!). It’s right for her because she is always trying to eat more vegetables, but they are not her favorite thing. This soup is almost pure vegetables, but it’s also creamy and warm and satisfying and a little spicy and cheesy; just right for the reluctant vegetable eater.

I’m out of town for the holidays so I though I’d share a few old classics that are nice at this time of year. These black bean, goat cheese, and chipotle enchiladas from my first cookbook, From Scratch may not be the simplest or quickest recipe, but they are so delicious. First, you roast the peppers and make the sauce, then you make the filling and then bake the enchiladas. Might seem like a lot of steps but it’s worth it for this super satisfying and decadent vegetarian main. And it’s fun to put together if you have a bit of time to slow down and putter around the kitchen. Keep reading
Here’s a heavily spiced pumpkin pie with brown sugar and a simple short crust. And it’s MUCH easier than I thought.
I know it’s late! I know you probably have your Thanksgiving plans carved into stone tablets already BUT if any of you are like me and are putting things together last minute for whatever reason… well here is my favorite pumpkin pie recipe! I came up with it for a fun video I did for NYU a couple of years ago making pie with then NYU President John Sexton. And I shared the recipe then. But this year’s version is both better and easier.
