Green Shakshuka

Shakshuka, if you are unfamiliar, is eggs poached in tomato sauce that is often scented with cumin and sometimes other herbs and spices. It’s from North Africa and the Middle east and it’s a wonderful, simple and healthy brunch dish you should quickly add to your repertoire. The greens can be whatever you wish, and with all the spring greens out, why not try something new? Almost any green is wonderful sautéd with garlic, a little chili and salty anchovies.
