The greens can be whatever you wish, and with all the spring greens out, why not try something new? Almost any green is wonderful sautéd with garlic, a little chili and salty anchovies. Whenever Dan is away this is what I eat. Not because he doesn’t like it, he does! But it’s just the perfect meal for one.
