Marinated Tofu and Red Cabbage Peanut Slaw Tacos

I’ve been wanting to re-make a really delicious cabbage slaw a friend of mine made me recently—it was red cabbage in a creamy dressing with sugared, toasted nuts and mango in addition to a bunch of herbs. Just incredible. Cabbage is one of the often forgotten vegetables. It isn’t famous and fancy like kale or cauliflower, but it has great flavor and crunch and man is it a bargain! Cabbage is so inexpensive, and one head of cabbage yields a massive pile of shreds. At the same time, there has been a package of firm tofu languishing in my fridge for far too long now. And so these marinated tofu and red cabbage peanut slaw tacos are born!

I must admit I don’t particularly care for Valentine’s day and I rarely even acknowledge it’s existence. In theory it’s a great idea. Celebrating love! Yes, I am so in! There isn’t anything more important to celebrate. But Valentine’s day is about romantic love and that means missing out on so much other love worthy of celebration. What about love in a family or between friends? Or the love we have for our communities and our fellow human beings? I want to celebrate all those kinds of love! But all that said, this year I also really wanted to celebrate my awesome partner Dan, just because he is the best, you know? So this year Valentine’s day is all about carrot-pineapple cake.

Beef stroganoff is one of my husband’s favorites, so I make it as a treat for him—and one of my early readers, Dave, says his mother made it for him growing up. It’s a classic winter meal from Eastern Europe that warms up a cold house and fills the air with rich aroma. You can use any cut of beef; just adjust the cooking time based on the toughness. Dave’s mom made it with red pepper instead of carrot, so feel free to do the same if you can get red peppers at a good price.

Chickpea Taco Bowl with Green Chile, Tomato and Cheddar

I have to be honest, it seems so trite to simply share a recipe right now while so many people are fighting for their most fundamental rights. This past weekend I felt so helpless and frustrated. Sure we donated to organizations supporting refugees and immigrants, but it didn’t feel like enough. It’s difficult to know how to move forward with life when our brothers and sisters are having their lives ripped away from them. But here we are. We all need to eat and take care of ourselves and follow our best instincts to care for and support one another. This is what we do and will continue to do. So here’s a delicious, quick and pretty cheap recipe.

It’s the winter and I just never want to eat salad in the winter. It just seems too cold! I want vegetables, but I want them warm, so I was totally taken with this wonderful simple idea for a taco bowl that my lovely friend Alex Stafford shared over at food 52. Of course I love that she suggests cooking the chickpeas from dried, which I totally encourage you to do if you eat chickpeas regularly. I wanted to make something similar right away using what I had in the cupboard, and lo and behold I had a can of chickpeas. I was just going to enjoy this creation for lunch and call it a day, but it turned out so delicious and easy I thought I’d share with you. So here is a bowl of warm chickpeas flavored with my favorite hatch chiles, tomatoes, onion and cheddar and tossed with shredded lettuce for added crunch. If you have sour cream, tortilla chips, avocado or anything like that to add, this bowl will only get better. And it’s possible that if you are not a pregnant lady this may feed more than one person 😉
