I’m away this week on vacation, but I wanted to keep bringing you some tasty summer meal ideas. Here’s one of my favorite, super simple summer pasta dishes from Good and Cheap: Pasta with eggplant and tomato. It’s mid summer so you should be able to get eggplants for a relatively low cost, and you can either grab a can of tomatoes, or make this with fresh tomatoes if you can afford them. Tomatoes are so sweet and delicious right now! The sauce for this pasta cooks in the time it takes to boil the water and cook the pasta. Oh man, the good fresh salsa potential is at its peak right now guys. You can get crazy good tomatoes, chilies, all kinds of stone fruit, baby onions, herbs like crazy. It’s pretty much a sin NOT to make salsa right now. Have it on everything.
With chips, (duh) on tacos, (double duh) in scrambled eggs, on grilled chicken or fish, as a salad dressing or with cold noodles.
If you don’t make it too spicy you can even just eat it with a spoon like a cross between a salad and chilled soup.

I am so glad that this salad has popcorn on it. Aren’t you? Gina, who sponsored this recipe in Good and Cheap through last summer’s Kickstarter, suggested that I add something crunchy to this salad of grilled zucs and corn. I was like “hello!! Have I forgotten my own rules? Salad must always have something crunchy!” and so I thank you Gina.
