Carrot-Pineapple Cake for Dan

Carrot-pineapple cake with cream cheese frosting from the top with flowers

I must admit I don’t particularly care for Valentine’s day and I rarely even acknowledge it’s existence. In theory it’s a great idea. Celebrating love! Yes, I am so in! There isn’t anything more important to celebrate. But Valentine’s day is about romantic love and that means missing out on so much other love worthy of celebration. What about love in a family or between friends? Or the love we have for our communities and our fellow human beings? I want to celebrate all those kinds of love! But all that said, this year I also really wanted to celebrate my awesome partner Dan, just because he is the best, you know? So this year Valentine’s day is all about carrot-pineapple cake.

Zucchini in chocolate cake sounds weird, but it’s a very mild flavor and the truth is you barely taste it. It adds tremendous moisture to these beautiful dark chocolatey muffins. The yogurt, oats, and zucchini make these so moist and soft and then you get a little gooey meltiness from the chocolate chips. Wow. Anyway, give them a try. They are a delicious breakfast treat, but they are yummy enough to have for dessert as well! Keep reading

Soft and Chewy Brown Sugar and Nutmeg Cookies

soft nutmeg cookies on a silver tray with blue flower dish towel

I LOVE chocolate chip cookies. So much that I really have difficulty making any other kind when the desire for cookies hits. Sure, shortbread is great, chocolate is wonderful, snickerdoodles, peanut butter. Yeah, all good. But as good as chocolate chip cookies? Please.

But I wanted to get out of my rut and these delicious brown sugar and nutmeg cookies were born! I still wanted that soft, chewy, melted brown butter, gooey in the center thing that is like THE POINT of cookies, but I wasn’t feeling the chocolate. So these are soft, mellow brown sugar cookies with a kick of eggnoggy nutmeg and a little cardamom. The nutmeg is so fragrant without being bitter, and the bite of this cookie is perfect. I hope you’ll love them as much as I do!
